Who doesn’t like a Potato Soup, maybe even with some bacon bits? Am I right? Well if you don’t know by now I love a warm comforting meal like Potato Soup, but it is loaded with unwanted calories. I love just warming up a bowl of soup, but I don’t want to feel bad about all of the calories I just ate.
Instead of feeling guilty, I put a spin on that wonderful Potato Soup I love. I came up with a delicious and healthy Cauliflower Potato Leek Soup. I meshed together cauliflower, potato and leeks, along with savoury flavous like thyme and garlic. In under an hour you can have a creamy, hot bowl of this skinny soup. When I mean skinny soup, I mean about 150 calories a serving. When I said guilt free I meant it.
This soup is a perfect meal for any of those days when you just need a pick-me-up. It’s freezer friendly, so you can make extra to enjoy any time you want. I love this recipe because it is so easy to make and the flavours make me want to eat it everyday. This is a healthy alternative and you will love every bite!
2 tablespoons unsalted butter
3 cups cauliflower florets
1 medium white potato, peeled and chopped
2 leeks, washed, white and light green part chopped
1 bay leaf
2 sprigs thyme
1 clove garlic, smashed
6 cups low sodium vegetable stock
salt and pepper, to taste
Melt butter in a large pot over medium heat. Add the cauliflower, potato and leek and sauté until softened, about 5 minutes.
Add the bay leaf, thyme and garlic and stir for 1 minute more.
Stir in the stock and bring the mixture to a boil. Reduce the heat and simmer the soup covered for 30 minutes.
Discard the bay leaf and thyme. Puree the soup using a food processor, blender or immersion blender. Return to the pot and heat through, about 5 minutes. Taste and adjust salt and pepper seasoning.
